What, more food!? Another entry on what I've been eating of late!?
'fraid so, pop-pickers. Last night I made triple-cooked chips with fillet steak, minted peas and roast garlic mayonnaise. Had Lawrence round, hence making a bit of an effort.
Pleased to report that the steak was fabulous, cooked 'a point' (as the French would say) and the chips were almost as wonderful - just need to balance cooking them as long as I dare at the first stage (boiling) and fry them a little cooler at the second stage, to reach perfection.
Roasted garlic mayo is MUCH better than the normal version, which is made with crushed raw garlic - using roasted means you get a bit less heat but the flavour is sweeter and there's no fear of indigestion. I'm doing it this way in future!
